Freeze drying vs dehydration: which really preserves more?

If two bags of dried mango sit side by side at very different prices, the difference is usually the drying method. It is worth understanding, because it changes what you are actually buying.

Dehydration: heat and airflow

Conventional dehydration blows warm air over produce for hours. Water leaves, but so does a good deal of the vitamin C and many volatile aroma compounds — they are heat-sensitive. The fruit shrinks and turns leathery as its cell walls collapse.

Freeze drying: sublimation

Freeze drying takes a different route entirely. The produce is flash frozen, then placed under very low pressure. Under those conditions ice does not melt — it turns straight to vapour. That phase change is called sublimation, and it happens without the fruit ever getting hot.

Why that matters

  • Heat-sensitive vitamins survive.
  • Cell structure stays intact, so the piece keeps its shape and shatters crisply rather than bending.
  • Flavour compounds are retained, which is why freeze-dried strawberry tastes intensely of strawberry.

The numbers

Freeze drying typically retains up to 97% of original nutritional value. Conventional drying lands somewhere between 30 and 50%. That is not a marginal difference.

The trade-off

Freeze drying is slower and more energy-intensive, so it costs more. For a fruit snack eaten for its nutrition, or an inclusion where appearance matters, it is worth it. For something destined to be boiled in a sauce, it may not be.
