Five ways to use breakfast cereal that are not breakfast
A box of flakes is a bag of toasted, fibre-dense crunch. Treating it as a breakfast-only product wastes it.
1. Yoghurt and fruit layers
Alternate curd, flakes and chopped fruit in a glass. Assemble just before eating, or the flakes soften.
2. A crumble topping that takes two minutes
Crush flakes coarsely, mix with a little ghee and jaggery, and scatter over stewed apple. Bake for 12 minutes.
3. Coating for cutlets
Crushed flakes make a better crust than breadcrumbs — coarser, and they hold their crunch longer after frying.
4. Energy bars
Warm jaggery and nut butter until loose, fold through flakes, seeds and chopped dates, press into a tray and chill for an hour before cutting.
5. Straight from the jar
Not a recipe, but honest: a handful of protein flakes is a better afternoon snack than most things sold as a snack.
One tip
Anything involving liquid, add the flakes last. Fibre-rich flakes absorb more than refined ones, and they go soft quickly.
